1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup cold, unsalted butter, cut into small pieces (keep it in the fridge 'til you need it)
2 tablespoons honey
2 tablespoons molasses
1/4 cup cold water
1 teaspoon vanilla
Mix together the flours, sugars, baking powder, baking soda, salt, and cinnamon.
Add the cold butter and mix or process until the mixture resembles coarse crumbs (this took my kitchen aid a few minutes).
Add the honey, molasses, water, and vanilla. Mix until the dough comes together in a ball.
Roll the dough 1/2-inch thick between wax paper or plastic wrap.
Chill for 1 hour, until firm. Lightly flour the dough and roll 1/8-inch thick.
Cut into 2-inch squares (I used my pizza cutter).
Arrange on a nonstick or parchment lined cookie sheets.
With a fork, prick several holes in each cracker.
Bake at 350 for 10 minutes, until lightly browned at the edges (mine actually took 8).
Remove from the oven and let cool in the pan.
You'll never go back to the box. These are SO good and rich and satisfying and you can feel good about eating them. Try it!

ooh those look so good! I want to try and make some... where do you find graham flour? I had no idea that it even existed!
I found some at one of the grocery stores nearby. It's Bob's Red Mill - they have tons of different flours and grains. Some stores carry it, some don't. I've used it in a few other things, but it's really dense.
I'm with you on the high fructose corn syrup soap box, along with modified corn starch, hydrolyzed vegatable protein and natural flavor (all code words for MSG). It is very difficult to stay away from these additives as they are in EVERYTHING. My kiddos love graham crackers so I am going to copy and print your recipe to try at a later date. Thank goodness there is a natural grocer nearby where I can be sure to find graham flour. Thanks for posting!
